Celebrate Springโs Harvest with this Goddess Pea Salad

Beltane marks the halfway point between the Spring Equinox and Summer Solstice and is a fire festival focused on themes of fertility, abundance, beauty and protection. It is celebrated on April 30th (Mays Eve) and May 1st. Beltane, or May Day, is directly opposite Samhain on the wheel of the year and is said to also be a liminal time when the veil between the spirit world and our world is thinner. In Ireland, Scotland, and the Isle of Man, celebrations include dancing around the maypole, meals focused on dairy products such as cheese, butter, cream and eggs (symbolizing the festivalโs theme of fertility and prosperity), and of course, bonfires.
My favorite way to mark this holiday is by spending time in nature with a walking meditation, eating a spring-themed meal featuring Spring Pea Salad (recipe below) and having a bonfire. I also like to cleanse my house (think energetic spring-cleaning) with a sage oil spray. I am finally done unpacking the entire main floor of our new house, and it's starting to feel like home. After all the work on moving, my husband and I are ready to enjoy this part of spring by spending a lot of time on the back patio soaking up all nature's beauty while watching Logan chase squirrels, his new favorite pastime. ๐ซ Spring Pea Salad ๐ฅ
3 Cups Spring Mix Salad
3 English Cucumbers, sliced
2 Avocados (cubed)
2 radishes, thinly sliced
1 cup fresh peas (blanche
1 block of feta cut into cubes
1/2 cup grape tomatoes (sliced in half)
1/4 cup Basil Leaves (thinly sliced)
Salt and Pepper
Your Favorite Greek Dressing or Vinaigrette
Mix the ingredients together in a large bowl and toss with the dressing (or serve it on the side). Recipe adapted from What's Gaby Cooking?
